Instructions
-
Crack the eggs into a large mixing bowl. Add the sugar and a pinch of salt. Using a hand mixer or stand mixer, beat the egg-sugar mixture until light, creamy and doubled in volume, about 2-3 minutes.
-
Sift the flour directly into the bowl to avoid overmixing. Gently fold the flour into the whipped egg-sugar mixture using a rubber spatula, just until combined.
-
Rinse, peel and core the apples. Slice into 1/4-inch thick half-moon wedges.
-
Add the apple slices to the batter. Fold gently to evenly coat the apples.
-
Grease a pie dish with vegetable oil. Line the bottom with parchment paper cut to fit. Pour the apple batter into the prepared pie dish.
-
Preheat oven to 350°F. Bake for 30-40 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
-
Allow the pie to cool for at least 1 hour before slicing to allow the filling to set.
